The celery juice trend is still going strong into another season! It’s like no matter what time of year, decade or century for that matter, leopard print is always “in” for me! I’ll toast to that! What is so great about celery — this seemingly calorie-less, nutrient-less vegetable or whatever it is? Its history runs deep… and it is in fact a vegetable with sleek fibrous stalks with pretty leaves far from nutrient-less. And it’s so pretty that there are paint schemes for nail polish and walls named from its hue of lustrous green.
Besides celery’s popular and inspiring color, its history has legendary qualities. Celery has been used as a cleansing tonic to counter deficiencies from the winter diet as far back as the 1800s. Even celery seeds jazz up cooking dishes plus it’s an extract used for herbal medicine. Celery was considered an edible delicacy in the Victorian era, more expensive than caviar! It was a fashion accessory for the table; the raw thinly sliced stalks served chilled in elaborate crystal vases to be eaten vigilantly. And in the early 1900s it was ranked the third most popular dish in New York City after coffee and tea. Celery was the “it” vegetable. The cleansing tonic was deemed to cure everything and it’s making a comeback, just like the scrunchie. The “it” vegetable again deemed to cure and alleviate a plethora of acute and chronic illnesses.
